Mitchell compares it to a lump of coal and a fire lighter, with the likes of porridge and brown rice releasing energy slower than, for example, white bread.
“One thing I always say to people is to go for things that are low on the glycemic index and foods that are slowly absorbed from the carbohydrate point of view – things like porridge, sweet potatoes, basmati rice, brown rice, brown pasta,” he says.
“They are more slowly absorbed throughout the day but you are still getting that energy in if you want to exercise throughout the day.
“It’s like the concept of a lump of coal or a firelighter. A lump of coal will burn nice and steady, but the fire lighter will burn very quickly. It’s the nice and steady that you are after.”
